Seafood Fusion Soup

Makes 4 servings

Ingredients

  • 2 (19-ounce) cans coconut milk
  • 1 tablespoon sliced, peeled ginger
  • 4 stalks lemongrass, cut into 1-inch cubes and crushed
  • 8 lime leaves, torn in half
  • ¼ cup fish sauce
  • 2 tablespoons granulated sugar
  • 2 Thai chilies
  • Juice of 1 lime (about 2 tablespoons)
  • ½ cup chicken stock, for thinning
  • 3 cups water
  • Dash of salt
  • 12 Shrimp Wontons (recipe below)

Preparation

  1. In a large stockpot, combine the coconut milk, ginger, lemongrass, lime leaves, fish sauce, sugar, Thai chilies, and lime juice. Bring the mixture to a slow simmer, uncovered, for about 20 minutes. Thin as needed with chicken stock.
  2. In another stockpot, bring the water and salt to a boil. Add the completed wontons to the pot and poach for about 3 minutes.
  3. Divide the wontons among 4 deep serving bowls. Ladle the soup over the wontons and serve immediately.

Garnish with diced roma tomatoes, chopped fresh cilantro, and drops of chili oil and basil oil for a burst of color and flavor.


Shrimp Wontons

Ingredients

  • ½ pound raw medium shrimp, peeled and deveined
  • 1 teaspoon minced peeled garlic
  • 1 tablespoon minced green onion (both white and green parts)
  • 1 tablespoon fish sauce
  • 1 tablespoon chopped cilantro
  • 1 teaspoon sambal paste
  • 12 wonton wrappers
  • 1 egg, beaten

Preparation

  1. Put the shrimp, ginger, green onion, garlic, fish sauce, cilantro, and sambal paste in a food processor. Pulse until the mixture is well combined.
  2. Drop about 1 tablespoon of the mixture into each wonton wrapper. Fold the wonton over and use the beaten egg to seal the wrapper. Place the wontons on a lined baking sheet until ready to use.
