Pan-Seared Filet Mignon with Green peppercorn demiglace, onion-mushroom confit, mashed Yukon gold potatoes,and asparagus.

Heat oven to 425. Bring a pot of water to a boil, place bags of potatoes, asparagus and sauce in the water to heat. Place steaks in oven for 3 min on each side depending on your desired doneness. Steaks have been seared but need to be 118 degrees in the middle for very rare to 125 medium rare up to 145 where your steak is now medium well we recommend no higher than 130 for best results but 145 is the safest temperature. Allow steaks to rest for 5 minutes. After 6 min pull asparagus out of water and leave potatoes in for another 3-5 minutes. Your steaks are now resting while your potatoes finish. Heat the confit in microwave 30-45 seconds or until warm.
Arrange potatoes and asparagus on a plate and pour a little puddle of sauce on the plate. Place the steak on the sauce and top with confit.
